Carp will also jump all summer long even when not spawning. You don't see them jumping much in cold water.
One theory is that they are trying to rid themselves of parasites, but I never really bought that. I think they just jump for the hell of it.
Another fish that likes to jump out of the water is the spoonbill, or paddlefish. One time I was fishing with my dad in a little jon boat and a 100-lb-plus paddlefish jumped clear out of the water only about 3 ft. in front of my dad's nose. (The record is 198 lb.)
