Not sure if anybody does this or knows of some areas that you can do this...

Where can I ride my horse and find some water to fish? Creeks, high alpine lakes/ponds? The area would obviously have to allow horses and have a parking area large enough for a truck and horse trailer.

Any places close to Denver? (I think you can ride at Chatfield and Cherry Creek, but I'm looking more for water that contains brookies)

Just an idea that came to mind which sounded like fun.

Up in your other neck of the woods, go up cataract, all of that is Wilderness and there is a few other lakes besides just upper and lower Cataract.

How about Caribou Ranch, out of Boulder? Says it's got riding trails, streams and waterfalls. They don't mention fish, but who knows?

I hate it when I come across horse sh#t on the trails in the wilderness areas. Really bothers me. That being said, you can pretty much bring a horse into most wilderness areas in CO which are full of lakes and creeks. Mt Zirkel has tons of access and there are lots of folks riding horses in there.
