I dip fillets in milk then in"Progresso Italian Breadcumbs" then fry in olive oil. I dont deep fry, just enough oil to brown em!

They don't look burnt to me, they look crispy. Who wants mushy perch sticks?! Only thing that should be up for debate is the choice of salad dressing....but then again I am a believer in Mike's approach towards "from lake to table" so I may need to give Marie a chance to convert me from french.
