...not colorado style, but in a smoker.

I've got my trout exactly where I want it. applewood from our own tree, salt, brown sugar, lil garlic, lil onion, lil pepper....it's the family preference.

I really want to make something to rival the honey smoked salmon from the store. anyone have a recipe they like for getting a similar flavor profile?

You want to "cure" the fish before smoking to improve the texture. Most are heavy on salt but you can use sugar or honey as the main ingredient to denature the protein. :smile:
