Just wanted to start the season off by trying to give everyone the fever. Below are pics of my trophies from last year and tonights catch. Hard part is trying to figure out what to have for dinner. Any suggestions or recipes?

Should I have these for dinner tonight? They're fresh.

Middle pic is so much of a better choice than bottom pic. Though I highly recommend to include the heineken from bottom pic with the middle pic  O0

I caught a few eyes too this spring so far. An old Lao dude that works with my friend requested that we allow him to be the chef and turned our walleye into Laotian fish salad!! And he didn't even cook em! Cured them with massive amounts of lime and nam tok stuff. Out of the fillets of three walleye about 18" turned into a big bowl of this salad and we had it with steamed rice while sippin on beer. It fed like 4 or 5 of us while on a serious case of beer munchies. Laotian walleye salad... Well you know, I think it's spelled walleye 'Nam tok' or something. Good spicy stuff.

Yeah, I'm a newbie to digital cameras so I get a little camera happy... This gave me the opportunity to show my amateur food photography skills  :p

My first thought was, if someone turned my hard earned walleye into a salad, I'd be really . After seeing what he ended up with though, it looks kinda yummy.
